I believe these are all related..
How can i increase Energy? i'm lvl 50 and i think it's 48.. most "?" around the cities i've conversed with.. haven't done many side quests, only focused on black spirit ones.
Conversations showing 2/42, this hasn't gone up since as long as i remember.. not sure how to increase that.
Knowledge, this is somehow related, but not sure how to increase any of them..
Anyone knows?
Energy increases by knowledge and only knowledge.
Knowledge is increased by talking to EVERY NPC u find as well as killing mobs for knowledge rank C-S. And your overall knowledge grows u get energy rewarded to you.
Every ? Mark on the map talk to once. Think I had 100 energy once I finished the main black spirit quest. Includes node managers way out in the middle of no where

That's the amity game. 2/42 means it costs 2 energy to attempt the amity game and you currently have 42 energy, but you need have acquired certain knowledge topics related to the npc in order to start it. It a pretty complex system, but a lot of energy increases later in the game will require you to do it. It can be frustrating and there are easier ways to gain energy quickly early game.
This is a pretty good guide to show you exactly how it all works.
Regarding increasing your max energy, as others have said you need to complete topics in your knowledge. This done by exploring the map, speaking with all npc's, grinding mobs to get knowledge on them, and a lot by playing the amity game with certain npc's to get missing topics.
You can get some knowledge from spending 2/42 to hear about the bandits, etc.
But energy this early on should be used on workers to get green plus to start with.
Find every node manager and just talk to every one on the way.
To increase maximum energy I recommend using the in-game Knowledge tile. Press Start and select "Knowledge", browse through that and see what your missing you can use the website below for reference to find the NPC's your missing.

thanks guys!
Each character in your family of characters has energy so make alts and you will have more energy
I'm not sure it's implemented in Xbox yet but you can also bottle up the Energy on your alts to share with your main through storage. 50 energy on your alt can be converted to 10 energy bottled.
Alustin in velia has this dialogue Option, but i havent tryed IT yet. For me are 50 energy on alt more profitable as 10 botled on Main, for now, later IT will change
Numbers on amity game option Show game costs/current energy value. With raised amity with npc game costs will raise too.
