I have a few friends outside of the USA so maybe add an option to play on EU servers or vice versa if you are in EU and have friends in the NA regions. If there is already a way please let me know

You can switch servers by going into your xbox setting and changing your region in the “location” option. Beware you’ll have to start from square one when you switch.

OH ok. Thanks for your reply. So that brings up my next question. If I switch back do I start over for NA region as well?

No your characters, skills etc., will still be at the level you left them on the other region. I will add that any special edition items will not be available on the other server you are switching too.
